Our range of PERI-PERI rotisseries allow open style cooking,these superb PERI-PERI (or Spatchcock ) rotisseries are equipped with dual action motors, that can be operated in either`rotary` (spit roast) or `alternating`(spatchcock/peri-peri) modes, offering you a choice of two cooking styles. In the alternating setting, the machine allows users to cook PERI-PERI chicken, which is easy to prepare,cooks quicker than the spit roast birds,and because it is grilled it has less fat,so it is also healthier for us. When using this setting, the motor turns the chicken 180 degrees, stops for 20 seconds, before turning again. This process dramatically cuts cooking times by approx 20 minutes for a chicken weighing a kilo. The benefits of cooking spatchcock/peri-peri chicken include increased chicken volumes and more significantly, savings on energy costs.
